We begin among the terraced kitchen gardens of a historic Puglian estate, gathering seasonal vegetables before joining the chef for a hands-on cooking experience outdoors. It is a gentle journey from the garden to the kitchen, shaped by local ingredients, traditional recipes and the simplicity of cooking with what the land provides.
The experience begins in the estate’s distinctive terraced vegetable gardens, where fresh, zero-kilometre produce is grown for the kitchens. We follow the chef through the garden, learning about what is in season while gathering vegetables along the way. Stories and small insights into the produce bring us closer to the agricultural traditions behind Puglian cooking.
With our ingredients gathered, we move into an open-air cooking class. Guided by the chef, we discover regional recipes and techniques while preparing dishes inspired by Puglia’s culinary history. The workshop is designed for both curious beginners and experienced food lovers, with the emphasis on seasonal ingredients and learning through doing.
Rather than beginning with a finished dish, we experience everything that comes before it—the garden, the harvest and the preparation. The result is a slower and more personal introduction to local cuisine, with the surrounding countryside remaining part of the experience from beginning to end.
On request, the experience can extend beyond the garden with a visit to the local port alongside the chefs, arriving as the fishing boats return and observing how the freshest catch of the day is selected.
We wander through the garden first, gathering what the season has made ready before carrying it into the outdoor kitchen. With the chef beside us, simple ingredients slowly become something to share. It is Puglian cooking at its most natural—rooted in the land, guided by tradition and enjoyed without hurry.
