Ibiza: A Premium Wine Tasting with Local Pairings

You'll step into Ibiza’s quieter wine culture for an intimate tasting centred around the island’s native grapes and small-production wines. Over the course of the experience, four premium wines are paired with local cheeses, traditional bites and Iberian delicacies, giving us a deeper taste of Ibiza beyond the coastline.

The Experience

A Taste of Ibizan Wine

The experience begins with a short introduction to Ibiza’s winemaking history, its indigenous grape varieties and the philosophy behind sustainable production on the island. From there, we move slowly through four premium wines from the Ibizkus and Totem collections.

Wines Shaped by the Island

The tasting focuses on characterful wines made from varieties such as Monastrell and Malvasia. The Totem wines are produced with minimal intervention and come from individual vineyard plots or ungrafted vines, offering a closer expression of Ibiza’s Mediterranean terroir.

Pairings from the Mediterranean

Each wine is accompanied by carefully chosen local flavours. We begin with olives and almonds before moving into local and Manchego cheeses with quince, honey and walnuts. A traditional Coca Ibicenca follows, alongside Iberian ham, pork loin and salchichón served with fresh bread and tomato.
